Lemongrass and mint, hot or iced

Lemongrass and mint infusion

Ten minutes. Two stalks of lemongrass, a handful of mint, hot water, and time.

Bash the lemongrass with the back of a knife until the fibres split. Whole, it gives you almost nothing; bruised, it gives you everything. Steep eight minutes, add the mint for the last two so it stays green.

Iced, make it double strength and pour it over ice rather than diluting it after.
